It’s been weeks since I’ve made a cake so I’m really looking forward to this one. It’s from Nigel Slater’s “Kitchen Diaries”.

He says it tastes even better if you leave it wrapped up to mature for a few days…

This has been my favourite cake so far… it’s really light and fluffy but the ginger gives it real depth. Yum!
