My sister made this chocolate cake when she was down for her visit to meet Harper. You’re never going to guess what it has in it, courgette! I’ve never made a cake like it. The courgette made the sponge really dense and some how more chocolaty. We all loved the pistachios.

The recipe is from a fab new cookbook I got for Christmas from my husband, Red Velvet & Chocolate Heartache. It’s filled with beautiful cakes, cordials, jams and puddings. All of them ‘low fat’ (can it be true?!), they use crazy ingredients like potatoes, carrots, butternut squash. If this first cake is anything to go by we’re in for a treat as I intend to work my way  through them all :-)
